Some children in the River Island neighborhood developed a green thumb over the summer.
Kristina Williams, founder of the Benderdinker festival in Columbia County, organized the Bender Digger gardening program for children. Each child in the group grew their garden on a plot of land in the River Island neighborhood. They grew herbs and a variety of vegetables including greens and tomatoes.
To celebrate the harvest from their first season, the group prepared a dinner Thursday using the produce from their gardens at the River Island clubhouse with the help of chef Charlene Tinley. The menu included such delicacies as Thai lemongrass soup with cilantro and shrimp and pork spring rolls with romaine and mint with a miso peanut sauce. The children helped prepare the food and shared samples with each other.
